INGREDIENTS

  • 1 cup Quinoa
  • 4 garlic cloves, pressed or minced
  • 1 can of your favorite vegetable-mix
  • ¼ cup coconut oil
  • 1 medium red onion, chopped
  • ½ teaspoon dried thyme
  • 1 large can (28 ounces) diced tomatoes, drainedafb randolph ma
  • 2 cans black beans, rinsed and drained
  • 4 cups vegetable broth
  • 2 cups water
  • 1 teaspoon salt, more to taste
  • Pinch red pepper flakes
  • Freshly ground black pepper
  • Juice of ½ to 1 medium lemon, to taste

INSTRUCTIONS

  1. Rinse the quinoa in a strainer
  2. Heat the oil in a saucepan over medium heatdiri shela rice afb hyde park ma
  3. Add the quinoa and vegetablebroth to the pan
  4. Stir in lime juice, the vegetable-mix and the remaining ingredients into the pan and simmer for 5 minutes or until the vegetable-mix is heated through

Serve hot or cold.
