This high-protein vegan Quinoa Black Beans vegetable meal recipe incorporates your ingredients and yields four large bowls of soup.
INGREDIENTS
- 1 cup Quinoa
- 4 garlic cloves, pressed or minced
- 1 can of your favorite vegetable-mix
- ¼ cup coconut oil
- 1 medium red onion, chopped
- ½ teaspoon dried thyme
- 1 large can (28 ounces) diced tomatoes, drained
- 2 cans black beans, rinsed and drained
- 4 cups vegetable broth
- 2 cups water
- 1 teaspoon salt, more to taste
- Pinch red pepper flakes
- Freshly ground black pepper
- Juice of ½ to 1 medium lemon, to taste
INSTRUCTIONS
- Rinse the quinoa in a strainer
- Heat the oil in a saucepan over medium heat
- Add the quinoa and vegetablebroth to the pan
- Stir in lime juice, the vegetable-mix and the remaining ingredients into the pan and simmer for 5 minutes or until the vegetable-mix is heated through
- Finally, mix in the black beans and cilantro as well as the remaining ingredients
Serve hot or cold.
